Darasimi – Microbiologist
I am currently pursuing my master’s degree in Poland, specializing in Food Science and Human Nutrition and I will be graduating this year. My thesis focuses on the modification of lysozyme using pepsin, contributing to advancements in food safety and preservation.
Before starting my master’s program, I completed several online courses, including Introduction to Food and Health, Gut Check: Exploring Your Microbiome and Child Nutrition and Cooking. These courses enhanced my understanding of food science and nutrition, laying a solid foundation for my academic journey.
As part of my studies, I completed a semester abroad through the Erasmus exchange program, where I gained hands-on experience with emerging technologies in food preservation. I learned different techniques and was able to practically apply high pressure processing (HPP) and ultrasound treatment to extend the shelf life of food. I also explored sustainable nutrition, obesity, food allergies and prevention of diseases through proper dietary choices and physical activity.
Additionally, a field trip to food processing plants during my coursework allowed me to witness firsthand the production methods I had studied in class.
Studying abroad has been transformative. It has taught me independence, adaptability and the importance of making thoughtful life decisions.
Beyond academics, I manage content for my church’s Instagram, fostering community engagement.
Looking ahead, I am passionate about pursuing opportunities in the field of food safety, leveraging my knowledge of nutrition and emerging technologies to improve public health and food security.
